Coffee Profiles

Since 1993 we have roasted only small-batch, specialty coffee. We roast on Diedrich gas-fired drum roasters. Each bean and bean blend has a unique, distinct “recipe” and profile we roast to. Every roasted batch is confirmed on our Agtron M-Basic roast analyzer for final accuracy. We package in 3-ply foil bags, evacuate the air, flush with nitrogen and heat seal each bag.

Coffee Profiles

Coffees Of The Americas:

Colombian Supremo

– grown on the steep slopes of the Andes Mountains in the beautiful Valle del Cauca. The farms (fincas) are mostly family owned and average only 6 acres. This classic varietal offers a gentle, nutty (hints of walnut) balanced cup with bright acidity and medium body.

Costa Rican Tarrazu

– We purchase this from the Don Roberto Cooperative in the Tarrazu growing region. Their quality is consistent and consistently high. Wonderfully bright and crisp with smooth body, excellent aroma and a hint of light chocolate and citrus in the finish.

Costa Rican Dark Roast

– The same bean from the Don Roberto Cooperative, but roasted to a deep, dark caramel. A richly aromatic cup with mild berry and citrus flavors and a touch of smoke and dark chocolate in the finish.

Guatemalan Antigua

– A favorite Latin American coffee. This is genuine Antigua, grown around the former capital of the country. The high altitude and rich, volcanic soils combine with a perfect climate for growing specialty coffee. Superbly aromatic with hints of spice and cocoa with a smooth, satin-like finish.

Guatemalan Guayab (Fair Trade, Shade Grown)

– Grown in the renown Huehuetenango region by the small Guayab Cooperative. We have been impressed by the product, and devotion, of these farmers for the last 5 years. A richly aromatic coffee of delicate taste profile, aroma of semi-sweet chocolate and papaya, and mild fruity/floral notes.

Jamaica Blue Mountain

– 100% JBM from the famous Wallenford Estate. Do not confuse with Jamaican blends. This is the real thing. The world prizes expensive coffee. It is grown at high altitude in hte Blue Mountains on the east end of the island. Soft and balanced with an aroma unique to these beans.

Mexican Altura

– A perfect “lighter” coffee. This Strictly High Grown bean produces a cup that is clean, crisp and refreshing with a mild chocolate profile and subtle ripe fruit undertones.

Coffees Of East Africa:

Ethiopian Yirgacheffe

– A light-medium roast East African bean from the Yirgacheffe region of Ethiopia. This coffee, with complex body and flavor, has hints of mango with a honey-like sweetness. Floral overtones with a citrus acidity complete this coffee.

Kenya AA Plus

– The top grade of coffee in Kenya, but much more than that. Ours beans come from the famed Keekorok region. Highly aromatic, lively and complex with hints of pink grapefruit, black currant and blackberry. Kenya’s standards are some of the highest in the industry.

Tanzania Peaberry (Zanzibar)

– Peaberries are two beans that have grown together inside the coffee cherry. Quite rare, they are prized for their intense flavor characteristics. This coffee is grown on the slopes of Mount Kilimanjaro. Rich in flavor and acidity with a cedar-like aroma and a pronounced winy aftertaste.

Yemen Mocca Mattari

– One of the world’s first, and finest, coffees. Mocca is the ancient port city of Yemen. These small, rounded beans are irregular in form, size and color. They yield a remarkable coffee that is distinctive with its buttery smooth tobacco, red wine, and berry-like character. Note the complexity of the aromatics.

Coffees Of The Pacific Islands And Indonesia:

Celebes Kalossi

– Also known by the island name Sulawesi, this coffee is rich, lush and exotic. A bolder cousin to Sumatra and Java with its own unique characteristics. Hints of cedar, leather, and aroma of chocolate, plum and earth that leaves a uniquely bittersweet finish.

Java Private Estate

– A fine estate coffee with heavy body, exotic richness and gentle spiciness indicative of this Indonesian coffee. A smooth coffee with sweet, plum-like and chocolate finish.

Kona Extra Fancy

– A truly world-class coffee from Greenwell Farms. Extra Fancy denotes the very highest grade of Certified Kona Coffee. Our lighter roast develops the inherent, natural sweetness of this bean. Considered to be a coffee in “perfect balance”, this Kona is very clean & well-balanced in the cup with hints of bakers chocolate.

Papua New Guinea AA (Fair Trade/Shade Grown)

– The original coffee trees of PNG came from Jamaica’s Blue Mountain region in the early 20th century. This medium roast is from the Okapa Valley in the Eastern Highlands Province. It has sweet, bright acidity, balanced body, caramel and floral overtones and slight cocoa in the finish. It is a new favorite for us!

Sumatra Mandheling

– Grade 1 from the famous Mandheling region. Deep, earthy and rich. Indonesian coffees are known for their body, and this bean will not disappoint. Look for a dry, nutty, wonderfully mellow flavor in the cup.

Sumatra Gold Roast

– We push this bean a little further in the roasting process. The result is a dark, rich, bold and ultra-smooth coffee with a hint of smoke in the finish.

Celebes Kalossi

African Classic

– This is our owner’s favorite blend and a signature coffee for O’Henry’s. Dramatically complex with intricate flavor components and notes of berries, spice and citrus.

Breakfast Blend

– A perennial favorite. Light and well-balanced with the perfect “wake me up” crispness to start the day.

Café Blend

– A wonderful coffeehouse-style coffee good for anytime of the day. Light, bright and smooth featuring three beans from three continents.

Classic Espresso

– Literally, millions of bar drinks have been made using this blend. A classic since 1993. Heady aroma, a tower of silky rust-colored crema and enticingly smooth, with a bittersweet nutty finish.

French Roast Blend

– Intense and intriguing, dark and engaging. Appreciated by true coffee connoisseurs.

House Blend

– Our #1 selling coffee, and for good reason. A great house blend should appeal to a wide audience with near universal acceptance. The 15 year track record of our House Blend speaks volumes. A balanced, medium roast with notes of light caramel and toasted nuts. Nicely clean in the finish with a subtle sweetness.

Genuine Mocha Java

- Yemen Mocca Mattari and Java Private Estate…this is the real thing. Generally accepted to be the first blended coffee in the world from about 300 years ago. A unique blend with a smooth, sweet cup and medium body provides a pleasant surprise.
